- 1/2 cup plain bread crumbs
- 1 cup diced onion
- 2 cloves fresh garlic
- 1/2 cup ketchup
- 1 large egg beaten
- 1/4 cup chopped parsley
- 2 tablespoons grated parmesan cheese
- 1 tablespoon mustard or honey dijon mustard
- 3/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon sugar
- 3 oz shredded Monterey Jack cheese
- 1 1/2 lb ground turkey
- 12 oz can of marinara sauce
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil and spray with non stick cooking spray.
Add bread crumbs to large skillet over medium-high heat. Cook, stirring often, until the breadcrumbs are golden brown. Transfer to large bowl and place skillet back on heat. Add onion and garlic another blast of cooking spray. Cook 3-4 minutes, stirring occasionally, until onion soften. Transfer onion and garlic to bowl with breadcrumbs.
Add ketchup, egg, parsley, Parmesan, mustard, oregano , salt, pepper, and Monterey Jack cheese to the bowl with onion garlic and breadcrumbs. Stir to combine ingredients. Add ground turkey and mix all ingredients together by hand. Don't over work or your mini meat loafs will lose their texture. Divide in to 6 evenly sized portions and shape each in to a mini meatloaf. Brush a light coating of ketchup on to each mini meatloaf.
In a small sauce pan warm marinara sauce over medium heat. Add salt, pepper, sugar, garlic salt and onion powder to personal taste preference.
Bake for 20 minutes or until 160 degree internal temperature. Top with marinara sauce and shredded cheese.
